Domain name is, among other things, used to resolve host names if entered without domain name part. E.g. if dhcp set domain name to "example.domain.tld" and user wanted to connect (https, ssh, etc.) to host named "server", then client's OS will combine these two to "server.example.domain.tld" and then try to resolve it (to IPv4 or IPv6 address).
The search option (option 119) will add additional domain name suffixes (one or more). Then OS will try to use the additional domain names (in order as sent by DHCP server) if the first try (described in previous paragraph) doesn't yield any result.
The key difference is that domain name can only be set to single domain name while search can be set to multiple domain names.
It's possible to set search parameter also when setting up networking manually on most OSes.
