I'd start off by upgrading routerboot to 6.49.3 since it's already on your device. After that I'd upgrade ROS to whatever is shown as the latest in your ROS (right now it can either be 6.49.10 or 6.49.11 depending the channel set on your router). The difference between 6.49.10 and .11 is, according to changelog, minor, so it's not really worth bothering. After that upgrade routerboot again so it's in line with ROS version.
You can do all of it using either of UIs (so you can do it via winbox or webfig or CLI). Even if you don't intend to use winbox it's good to download it before making changes to working router. Winbox can sometimes connect to router while router is not responding to IP connection attempts, so it can be a very welcome disaster-recovery tool.

After that think hard about ROS v7 ... is there a new functionality available in ROS v7 which you need on your router? VLAN support is much better on RB750Gr3 in ROS v7, but if you don't use VLANs (in a switch-like manner), then it doesn't matter to you. Ditto for other new features.
Currently there is no known vulnerability in ROS v6 that would be fixed in v7 so from security point of view there's no need to upgrade to v7. Likewise performance wise, v7 is as fast as v6 in best case, more likely it's a tad slower.
